Ingredients:
- 1 baguette, sliced
- 1/2 cup olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves
- 8 ounces mozzarella cheese, sliced
- Salt and pepper to taste
- 1 bottle of your favorite red wine
Instructions:
Preheat oven to 375F 190C
In a small bowl, mix olive oil and minced garlic
Brush each baguette slice with the garlic-infused olive oil
Place the slices on a baking sheet and bake for 5-7 minutes or until lightly toasted
On each toasted baguette slice, layer a slice of mozzarella cheese, a halved cherry tomato, and a basil leaf
Sprinkle with salt and pepper to taste
Return to the oven and bake for an additional 5 minutes or until the cheese is melted
